A2 Cow Ghee is known in Ayurveda for its health benefits. Gir cows are one of India’s oldest and most respected breeds, found in the Gir forest of Gujarat. Their milk contains only A2 protein, which is easier for the body to digest and absorb.

Most regular dairy comes from crossbred or foreign cows. Their milk has A1 protein, which can turn into a compound called BCM-7 during digestion. This may cause bloating, discomfort, or gut issues for some people.

The Bilona Method - Why We Do It the Hard Way

The Bilona process is slow, labour-intensive, and entirely done by hand. It takes 12–18 hours and 25–30 litres of milk to produce just 1 kg of ghee. Commercial brands produce the same quantity using 15 litres of milk and a machine in under an hour. That difference tells you everything.

Here is how every batch of Organic Gyaan Bilona Ghee is made:

Step 1 - Fresh milk is collected each morning from our free-grazing, grass-fed Gir cows. No hormones. No antibiotics. No artificial feed.

Step 2 - The milk is gently boiled over a low flame to preserve its natural vitamins and nutrient profile.

Step 3 - The boiled milk is cooled and set into thick, creamy curd overnight using a natural live culture. This fermentation step begins breaking down fats into more bioavailable forms and builds the depth of flavour that makes Bilona Ghee unmistakable.

Step 4 - The curd is hand-churned bi-directionally using a traditional wooden Bilona churner for 4–6 hours per batch. This is the Manthan - the sacred churning that separates pure white makkhan (butter) from the buttermilk.

Step 5 - The makkhan is slowly heated over a low flame until all moisture evaporates. The clear, golden liquid that remains is strained - this is your ghee. Pure. Aromatic. Alive.
